Pinch of fine sea salt
granulated sugar
cornstarch, sifted
white wine vinegar
pure vanilla extract
heavy cream
confectioners’ sugar
vanilla bean
white dragon fruit, scooped with a melon baller
2 large or 3 small white nectarines, pitted and cut into thin wedges
Dried coconut flakes, for sprinkling
