'Cook Color' Recipe for Pavlova with Vanilla Cream, White Dragon Fruit, and Nectarines

If a puffy cloud or mound of untouched snow could turn into a showstopping dessert, it would be pavlova. Topped with white dragon-fruit balls, nectarines, and dried coconut flakes, the meringue is best enjoyed the day it's made.

large egg whites

Pinch of fine sea salt

granulated sugar

cornstarch, sifted

white wine vinegar

pure vanilla extract

heavy cream

confectioners’ sugar

vanilla bean

white dragon fruit, scooped with a melon baller

2 large or 3 small white nectarines, pitted and cut into thin wedges

Dried coconut flakes, for sprinkling
